Il Palmento

Perched on the slopes of Etna, between hillsides and farm terraces, Palmento Costanzo has brought new life to an ancient landscape.

The Restoration

Our project involved the restoration of a series of ancient buildings dating back to the 14th century.
The rebuild started in 2011. It followed the principles of “bioarchitecture”: showing maximum respect in the way we restored the wine cellar and the manner in which new technology was implemented.

The Wine Cellar

The wine cellar is built around the ancient millstone in the restored winery.
Our wine making process is based on an artisanal system, with the newly harvested grapes crushed and immediately placed in fermentation containers. The juice is then decanted into the cellar by gravity.

The Vineyards

Our vineyards rise from and altitude of 600 up to 800 metres.
The vineyard covers some 14 hectares, planted with traditional local vines on the north side of the volcano.
