Soil: black, brownish volcanic sand; volcanic rocks.
Training system: bush-training with chestnut poles. Up to 100 years old vines.

Average yield: 50 quintals.
Harvest: manual, last week of September.
Vinification: soft pressing and fermentation in stainless steels tanks with selected indigenous yeasts.
Ageing: 10 months in stainless steel tank in contact with the fine lees and 8 months in the bottle.
Alcohol content: 12% vol.
Tasting: straw yellow colours, with a complex bouquet of white flowers, citrus fruit, honey, saffron, with aromatic herbs and petrol hints. It is fresh, juicy and persistent on the palate with a sapid finish.
