The harvest begins with a meticulous selection of the bunches in the vineyard and in the cellar. We bring only the best berries into the winery for fermentation. The entire process of harvesting and vinification is supported by the latest technology.
During the harvest the bunches are hand-harvested, and delivered to the winery in small boxes. Here, the fresh, ripe clusters are laid out on a sorting table. A subtle vibration in the table moves the grapes through the destemmer.
Maceration, fermentation and aging follow gentle modern practices that guide the evolution of our wines.
We practice eco-sustainable viticulture. The choice was inspired by our desire to protect the biodiversity of our vineyard. By maintaining each vine as an individual and working with the spontaneous, seasonal changes, the vines consistently produce healthy grapes with unique territorial qualities of Cda. Santo Spirito.
Our harvest usually begins in the last ten days of September, and lasts until the end of October.
