Area of production: Contrada Santo Spirito, Passopisciaro, Mount Etna – North.
Elevation: 680-750 mt. s.l.m.
Kind of Soil: Black, Brownish volcanic sands 60-70%, Volcanic rocks.
Training system: Bush-training with chestnut posts/Guyot.
Plantation density: On average 8000 vines/Ha per Bush-training, 5000 vines/Ha per Guyot.
Average yield: 1 kg/vines; 55 Hl / Ha.
Harvest: Manual, first decade of October.
Vinification: Soft pressing. No maceration, there is only a small contact during the draining process of the skins.
Tasting: Medium straw yellow. Fruity and flowery at the nose, with yellow citrus pulp, balsamic and mineral hints. Fresh, long, insinuating and structured in mouth.
Grapes: 70% Carricante 30% Catarratto from 5 until 30 years old.
Ageing: In stainless steel tanks for 6 months.
Alcohol content: 13% vol.
Service temperature: 10-12°C.
